Josef Joe Fischer, took over the winery in 2010 in 5th generation. A rising star of the Wachau, Joe studied winemaking at the renowned school in Klosterneuburg before travelling to New Zealand, Australia, Germany and South Africa to learn different vinification styles and methods. In his five single vineyards, Joe practices integrated agriculture, protecting animals and seeding beneficial plants to increase the soil’s nutrients. All the grapes are hand harvested. In the cellar, Joe Fischer works only with 100% healthy grape material and handles them as gently as possible. Spontaneous fermentation and long contact on the fine lees are top priorities for precise, elegant and fruit driven wines as well as rich, mineral and concentrated wines with great aging potential. Situated on the southern bank of the Danube in Rossatz, the focus is set on white wine. The majority has Grüner Veltliner with 70%, followed by Riesling with 25% and 5% Gelber Muskateller. The vineyards reach from Rossatzbach to western Rührsdorf. Stylistically from deeper soils with a rounder and powerful stylistic named Steiger and Frauenweingärten to very meagre, primary rock dominated vineyards which express significant mineral styles like Kirnberg, Kreuzberg and Zanzl. Entrusting his son to take over the winemaking, and bring it to a new level of excellence Josef Fischer sen. has been breading Huchen (Danube Salmon), a nearly extinct great of the Danube river very enthusiastically and with great passion since the 1980’s. The Fischer family’s great respect for nature and the sustainability of this fish inspired their wine labels. However, the concept of sustainability counts not only for his fish farming.
