From the Importers’ Website: Maipe was the Lord of the Winds for the ancient Andean Indians. He is still called upon to clear the skies after heavy rain, or to temper the summer heat. Maipe Reserve Cabernet Sauvignon is crafted from hand selected parcels of the finest grapes grown at Chakana Estate. The wine is smooth u0026amp; complex with intense, savory fruit flavors, great length u0026amp; elegance. The grapes are carefully chosen u0026amp; fermented in small lots to preserve the vineyard identity. Alcoholic fermentation for 10 days with indigenous u0026amp; selected yeasts, at temperatures of 26 u0026amp; 30°C, combining, remontage, pigage u0026amp; delestage in order to obtain the best quality of tannins u0026amp; structure. The resulting wine is barrel aged for 12 months to fully reveal the character of the Andean terroir.
